Phở Bo

Delicious Vietnamese beef-and-noodle soup. Yields two servings.

  • 200g rice noodles
  • 1 L rich beef broth
  • 2 star anise
  • 1 cinnamon stick
  • 1 cm chunk peeled fresh ginger
  • 1 onion, quartered
  • 2 cloves
  • 250 g steak
  • 1 tablespoon fish sauce
  • salt & pepper to taste
  • 1 lime, cut into wedges
  • 4 scallions, minced
  • 1–2 chilies, minced
  • A heaping plate of mixed herbs: basil, cilantro and mint are most important, but chervil, lovage, parsley, shiso, dill, marjoram and other tender herbs are all appropriate.
