Phở Bò
Delicious Vietnamese beef-and-noodle soup. Yields two servings.
- 200g rice noodles
- 1 L rich beef broth
- 2 star anise
- 1 cinnamon stick
- 1 cm chunk peeled fresh ginger
- 1 onion, quartered
- 2 cloves
- 250 g steak
- 1 tablespoon fish sauce
- salt & pepper to taste
- 1 lime, cut into wedges
- 4 scallions, minced
- 1–2 chilies, minced
- A heaping plate of mixed herbs: basil, cilantro and mint are most important, but chervil, lovage, parsley, shiso, dill, marjoram and other tender herbs are all appropriate.
